BIANCO IGT TOSCANA "MATRECA"
Blend:
80% Trebbiano
12% Chardonnay
8% ..white Tuscan Malvasia grapes.
Vinification:
The grapes are picked manually
and soft-crushed (max 1.4 bar); the must is then cooled to a
temperature of 10°C to encourage natural clarification. It is then
transferred to stainless steel vats, where it ferments at a controlled
temperature (maximum 17°C) for 15-20 days.
At the end of the alcoholic fermentation the next step is Battonage,
stirring the lees once every 3 days for the duration of the aging
process.
Aging:
The wine is kept in stainless steel vats
at a temperature of 17°C in order to preserve the fragrance of the
aroma. The wine is bottled in the spring following the grape harvest
and aged for 4 months in the bottle before marketing.
Organoleptic characteristics:
MATRECA®
is a characteristic wine from Tuscany, pale gold to straw-yellow in n
colour. Its delicate fragrancve, confered on it by Chardonnay, is reminiscent of the yellow-fleshed
fruit, with floral notes of pink and yellow blooms, and a final scent
of honey. In the mouth it is dry with a slightly astringent undertone,
soft, with good structure conferred on it by the Tuscan Trebbiano grape.
Pairing:
Perfect with poultry, fish and shellfish, also excellent with fresh cheese and Tuscan salami.
